Paneer cubes
1 cup
Thick yogurt
1 tsp
ZAFF saffron strands
2 tbsp
Mustard oil
1 tbsp
Lemon juice

Method

In a large bowl, combine yogurt, ginger paste, garlic paste, vinegar, lemon juice, chili powder, cumin, coriander, turmeric, cinnamon, cardamom, salt, and ½ tsp ZAFF Aroma Powder to create a rich, aromatic marinade.

Rub the marinade generously over the lamb, massaging it into every crevice. Cover and marinate overnight to allow the flavors to deepen beautifully.

Wrap the marinated lamb tightly in 2–3 layers of foil (banana leaves optional for added aroma), sealing in all the moisture and spices.

Bake at 150°C for 5–6 hours until the lamb becomes incredibly tender and pull-apart soft.

Unwrap and broil for 5–10 minutes to brown the surface lightly, then rest briefly before serving — succulent, fragrant, and infused with ZAFF’s golden signature.
