Method

Combine mutton with yogurt, ginger-garlic paste, fried onions, green chilies, mint, coriander, lemon juice, salt, and biryani masala. Let it rest for 4–12 hours, allowing the flavors to deeply infuse the meat.

Parboil the soaked basmati rice with whole spices and salt until it is about 70% cooked, then drain and set aside.

In a heavy-bottomed vessel, begin layering: start with the marinated mutton, followed by rice, fried onions, and fresh herbs. Drizzle saffron-infused milk and ghee over the top to add color and richness.

Lightly spray ZAFF Aroma on the rice layer before sealing the vessel, infusing the biryani with a subtle, enchanting fragrance.

Dum cook the biryani on low heat for 45–70 minutes, then rest for 10 minutes before serving to allow flavors to harmonize beautifully.
