Sauté chopped onion in oil with whole spices (bay leaf, cinnamon, cardamom, cloves) until fragrant and lightly golden.

Add chicken pieces along with the Kabsa spice blend (coriander, cumin, paprika, black pepper, turmeric) and stir for 3 minutes to coat well.

Mix in chopped tomatoes and tomato paste, pour in water or stock, add salt, and simmer for about 20 minutes until the chicken is tender and flavorful.

Add washed basmati rice to the pot and cook until the rice is fluffy and fully done, absorbing the rich spiced broth

Lightly spray ZAFF Aroma over the hot rice just before serving, allowing its delicate saffron fragrance to rise beautifully with every warm breath of steam.
