Chicken Kabsa

Ingredients
● Chicken (pieces): 1–1.2 kg
● Basmati rice: 2 cups (400 g)
● Onion (chopped): 1 large
● Tomatoes (chopped): 2
● Tomato paste: 1 tbsp
● Oil: 2 tbsp
● Whole spices: bay leaf 1, cinnamon stick 1, cardamom 4, cloves 4
● Kabsa spices: coriander 2 tsp, cumin 2 tsp, paprika 2 tsp, black pepper 1 tsp, turmeric ½ tsp
● Water/stock: 3.5 cups (840 ml)
● Salt: 2 tsp
● Zaff Aroma Spray: 2 sprays
Method

  1. Sauté onion + whole spices. Add chicken + ground spices; stir 3 min.
  2. Add tomatoes + paste + water; simmer 20 min.
  3. Add rice; cook until done.
  4. Spray Zaff on hot rice before serving.
