Coconut Curry

Ingredients
● Coconut milk: 400 ml (1 can)
● Onion (sliced): 1
● Tomato (chopped): 1
● Mixed veg or chicken: 500 g
● Oil: 2 tbsp
● Mustard seeds: 1 tsp
● Curry leaves: 10–12 leaves
● Ginger-garlic paste: 1 tbsp
● Green chilies: 2
● Turmeric: ½ tsp
● Coriander powder: 1 tsp
● Chili powder: 1 tsp
● Salt: 1½ tsp
● Tamarind (optional): 1 tsp
● Zaff Aroma Powder: ¼ tsp
Method

  1. Heat oil; pop mustard seeds, add curry leaves.
  2. Add onion, then ginger-garlic, then tomato.
  3. Add spices + veg/chicken; sauté 2 min.
  4. Add coconut milk + salt; simmer until cooked.
  5. Add Zaff powder in last 2 minutes.
