Paneer cubes
1 cup
Thick yogurt
1 tsp
ZAFF saffron strands
2 tbsp
Mustard oil
1 tbsp
Lemon juice

Method

Sauté chopped onions in oil until soft, then add whole spices (bay leaf, cinnamon, cardamom, cloves) to release their fragrance.

Add chicken pieces and brown lightly for 3–4 minutes, then stir in chopped tomatoes, tomato paste, minced garlic, ground spices (coriander, cumin, turmeric, black pepper), and loomi (dried lime).

Pour in water or stock, bring to a simmer, and cook for 20–25 minutes until the chicken is tender and infused with spices.

Add the washed basmati rice to the simmering chicken mixture, cooking until the rice is fully done and fluffy.

Lightly spray ZAFF Aroma over the rice just before the final 5–10 minutes of steaming, allowing its delicate saffron fragrance to infuse every grain.
