Ingredients
● Chicken pieces (or lamb): 1 kg
● Basmati rice: 2 cups (400 g)
● Onion (chopped): 1 large
● Tomatoes (chopped): 2
● Tomato paste: 1 tbsp
● Garlic (minced): 1 tbsp
● Loomi (dried lime): 1–2
● Oil: 2 tbsp
● Whole spices: bay leaf 1, cinnamon stick 1, cardamom 4, cloves 4
● Ground coriander 2 tsp, cumin 1 tsp, turmeric ½ tsp, black pepper 1 tsp
● Water/stock: 3.5 cups (840 ml)
● Salt: 2 tsp (adjust)
● Zaff Aroma Spray: 2 sprays
Method
- Sauté onion in oil; add whole spices.
- Add chicken; brown 3–4 min. Add tomatoes, paste, garlic, spices, loomi.
- Add water/stock; simmer 20–25 min.
- Add washed rice; cook until done.
- Spray Zaff on rice before final steaming 5–10 min.
